Here’s a simple recipe for Veg Chow Mein:

Ingredients:

200g noodles (boiled)

1 medium onion (sliced)

1 medium carrot (julienned)

1 cup cabbage (shredded)

1 medium capsicum (thinly sliced)

2-3 cloves garlic (minced)

2 tbsp oil

2 tbsp soy sauce

1 tbsp chili sauce (optional)

1 tbsp vinegar

1 tbsp tomato ketchup

1 tsp black pepper powder

Salt to taste

Spring onions (chopped for garnish)

Instructions:

1. Boil the Noodles
Cook the noodles as per the package instructions. Drain, rinse with cold water, and toss with a little oil to prevent sticking.

2. Prepare the Vegetables
Chop and slice all the vegetables thinly for quick cooking.

3. Stir-Fry

Heat oil in a wok or large pan over high heat. Add minced garlic and sauté for a few seconds.

Add onions, carrots, and capsicum, and stir-fry for 2-3 minutes.

Add shredded cabbage and cook for another 2 minutes.

4. Add Noodles and Sauces

Add the boiled noodles to the wok.

Pour in soy sauce, chili sauce, vinegar, and ketchup. Sprinkle black pepper and salt. Toss everything well.

5. Cook on High Heat
Stir-fry everything on high heat for a few minutes to combine flavors.

6. Garnish and Serve

Sprinkle chopped spring onions on top.

Serve hot with chili sauce or ketchup on the side.
